I've read where some do not like to use a weir, if so, what would you use for a waterfall?

I am using a skippy filter with a 2" output PVC pipe, do I just run that into the rocks or is there a better way?

I run my 2" pipe onto my water fall rock and cover up the pipe with other rocks
some times i heat the pvc pipe to flatten it out for a better fit

I run mine into a small preformed Home Depot plastic pond accessory then it spills over onto the cascading waterfall that is rock lined.

I also have a 2 inch pvc outlet pipe. I connect it to a piece of 2" abs with a slip coupler. I just ran the abs through a space between two rocks and sealed around it with black pond foam. The water runs onto and down the cascade of rocks.
