Totally underwater? Valisneria or saggittaria are often called tape-grass or eel-grass, and look like a shaggy lawn. Depending on water temperatures, cabomba, elodea, or potamogeton give a very nice "bushy" effect. Hornwort is good for cooler areas, but doesn't actually root. In your zone, you could try almost anything from your local aquarium store. Any of the swordplants (Echinodorus) should do well also.

Among others, Japanese iris, Acorus gramineus variegata, tropical waterlily, lotus, Cyperus isocladus, Calla lily, Spider lily, LA iris Ann Chowning come to mind for a Texas climate

I'd love to find some water val or elodea that is cold-hardy for my pond. I have a nice bed of sand in the bottom for them to root in, but haven't had any luck growing fully-submerged plants. Does anyone know a good source to find either of these?

My favorite is Horsetail Rush, which is a shallow water plant but really cool. I even planted a couple in the ground and they did just as well.

I've got a Red Stem Golden Club that's pretty cool/different. Didn't get flowers last year but the leaves are really nice. Actually, I've got it in my basement right now, and even with little light its still growing leaves.
