Can you store hardy water lilies when not in water?

I may end up with more plants than I wanted, but I don't have any more room to put them in tubs or stock tanks. Can you store the tubers, rhizomes [whatever they're called]? And if so, how?

clean them of the leaves most of the mass of roots, stick in a mesh bag with a rock and sink under the water. Someone posted on here looking for lilies if you want to get rid of some.
