Koi Eating my Plants

MY koi Keep Eating the roots off my plants (Water Hyacinth ) and they wont stay alive what kind of plants can i get or what should i do. My pond gets almost all sunlight and i need some sort of water coverage of somethin to block the sun to help keep my pond creal. Ill Get pic later

are they eating the whole root, or just the black fiberous roots,if its just the black fiberous hair roots the plant will come back. they do it to mine too but they grow back. talk about eating plants...i just bought 20 bundles of oxygenators not one bunch is still intact. they've even pulled small leaves and stems off my lillies

im pretty sure they are eating the whold thing id get liek 6 of em and in 2 teeks thay would b all small and brown and starting to rot
