no , dragon is big scaled or have some bigger scales in a line

I watched a video on youtube where the so called "expert" said the ryu in kikokuryu meant dragon....but neither one of the 2 kikokuryu I bought had scales so now I'm wondering if they are 2 totally different "Dragon" categories

dragon(doitsu german hybrid) is that big scale line koi , its defined due to its structure but then ghost & kikokuryu is based on its pattern color , so i think kiko is kind of dragon which is metalic and ghost one can be normal koi or among dragon too

That's from an article called "Types of Koi". I have no idea if that's correct though! haha! The power of the internet!

In order for a fish to be a "hybrid", the parents would have to be of two different species.

can be from 2 varieties too , like hybrid of stripped bass and white bass

Not in MY dictionary! "two different SPECIES". If a white man fathers a child with a woman of another persuasion, the child is NOT a hybrid, it is still a human being!
