Is it possible to 'bonsai' a water lily?

This is exactly what it sounds like...can you 'bonsai' a water lily so that it stays smaller and more manageable than it usually grows?

Limit the size of its tuber and you limit how many shoots it can put up.

Not really. Trimming leaves results in fewer, but still large, leaves. Restricting available space will result in the plant growing upwards, out of the water. There are a number of cultivars available that stay small, with leaves only 2 1/2" to 3" across, and flowers about 1 1/2". Ideal for a large pot or half-barrel water feature.
