If I put them in baskets what is the best thing to use for soil so it doesnt muddy up my pond

I use the pure kitty litter from walmart, the cheapest stuff they have, pure clay. It works great

That sounds like it, it is just pure clay no additives.

Last time I bought it the bag was not all red.

When you submerge the pot, put it in slowly, some dust will come out, it will go away. A lot of koi keepers add clay to their pond for fish health.

That is it and it is pure clay, used to be around 2.50 or so now I think it is 3.33 or so. I have bought around 30 bags of the stuff lol

For anyone else following this thread, an alternative source for the kitty litter is at automotive supply shops. The stuff works great for soaking up oil spills, and when you're using it in the garage you of course don't need any special additives for clumping or for the smell, so it is more likely to be 100% pure clay. And it was always the cheapest source I could find.

can you take some closer pictures of the plants and leaves?
It is hard to tell. It looks like you have lily leaves showing.

Definitely Water hyacynths, but I can't see any Water lettuce in the picture.
